These yummy 5 SP Oatmeal Banana Cookies are just for you. Since they are only 5 SP you an eat them all or spread them out throughout the day to snack on.
Prep: 10 minutes - Difficulty: Easy- Cook: 15 minutes -Serves: 1 - Makes about 8 cookies
Banana- 1 medium, Mashed
Uncooked oatmeal - 1/4 cup
Baking powder- 1⁄2 tsp
Table salt- 1 pinch
PB2 Powdered peanut butter- 2 Tbsp
All-purpose flour- 1 3⁄4 Tbsp
Vanilla extract- 1 tsp
Baking cocoa- 1⁄2 Tbsp
Ground cinnamon- 1 tsp
Raisins- 1 Tbsp
In a bowl mix the oatmeal, flour, baking powder, PB2 powder, baking cocoa, cinnamon and set aside.
In another bowl, mash the banana and then add the egg, vanilla and a pinch of salt. Hand mix.
Add the dry ingredients to the banana mixture and mix by hand until all mixed up.
At this point you an choose to add extra ingredients. 1 Tablespoon of raisins is 1 SP. Raisins are usually my only add in, but you can add nuts, chocolate chips, etc. just remember to calculate the points and add them to the 4 SP base recipe.
You can add sweetener, like stevia. I just don’t like it in my cookies.
Bake at 350 degrees on a parchment paper lined cookie sheet for 15 mins. Cool on a wire rack and enjoy!
