Oh my! Oh my!

I’m in heaven with this amazing dessert.

1 SP Chocolate Mousse

Let’s get right into making this chocolate goodness!

Here’s what you will need:

1 cup of Greek yogurt ( Fage is my favorite and I feel the best for this recipe)

1 tablespoon of sugar free chocolate pudding

Simply put the yogurt in a bowl and add the sugar free chocolate pudding and mix well. As you are mixing, it will start to look like a rich chocolaty mouse.

You can eat it right away, or what I like to do is take two pretty dessert or wine glasses and make two servings out of it.

The presentation part makes it feel even more decadent. I feel like I just ordered chocolate mousse at a restaurant.

This has become my evening snack lately. I like to add fruit sometimes too. I add Strawberries, raspberries or blueberries. I love the blueberries, because when I eat this mousse with blueberries, it gives it another level of texture and the blueberries pop. You can chop up some fresh mint and mix it in too.

This brings me so much joy! Food is supposed to bring you joy!

Life is too short to not have a little chocolate mousse in your life!

Swiss’s Oatmeal Raisin Banana Cookies

Swiss’s Oatmeal Raisin Banana Cookies

These yummy 5 SP Oatmeal Banana Cookies are just for you. Since they are only 5 SP you an eat them all or spread them out throughout the day to snack on.

Prep: 10 minutes - Difficulty: Easy- Cook: 15 minutes -Serves: 1 - Makes about 8 cookies

Ingredients

Banana- 1 medium, Mashed

egg- 1

Uncooked oatmeal - 1/4 cup

Baking powder- 1⁄2 tsp

Table salt- 1 pinch

PB2 Powdered peanut butter- 2 Tbsp

All-purpose flour- 1 3⁄4 Tbsp

Vanilla extract- 1 tsp

Baking cocoa- 1⁄2 Tbsp

Ground cinnamon- 1 tsp

Raisins- 1 Tbsp


Instructions

  1. In a bowl mix the oatmeal, flour, baking powder, PB2 powder, baking cocoa, cinnamon and set aside.

  1. In another bowl, mash the banana and then add the egg, vanilla and a pinch of salt. Hand mix.

  2. Add the dry ingredients to the banana mixture and mix by hand until all mixed up.

  3. At this point you an choose to add extra ingredients. 1 Tablespoon of raisins is 1 SP. Raisins are usually my only add in, but you can add nuts, chocolate chips, etc. just remember to calculate the points and add them to the 4 SP base recipe.

    You can add sweetener, like stevia. I just don’t like it in my cookies.

  4. Bake at 350 degrees on a parchment paper lined cookie sheet for 15 mins. Cool on a wire rack and enjoy!

    They are a great take with you healthier cookie snack for on the go or at home watching movies.

Notes

* The cocoa does not make it less sweet. It helps make it more like a cookie. Its like flour without the points.

Bagels WW Freestyle Points

I talked about making these bagels on the podcast. I’m not a baker or chef, but I can make these babies. They always turn out so good and they are easy.

*Also please let me point out that these are not my recipe and you can find them all over Pinterest and Instagram. I do want to give credit to where I first saw this recipe and that was on Instagram @2ingredientdough.

 

 Here is a list of the Ingredients that you will need.

1 cup of self-rising flour

1 cup Fage Total 0% Greek Yogurt- ( I have found this to be the best yogurt to use)

1 Egg for egg wash

*Bagel toppings are optional and depending on the topping, it could add points to the bagel.  I like to use Trader Joe's Everything But the Bagel seasoning, just the egg wash and sometimes some cinnamon sugar.

Ok so now how to put these beauties all together.

 First Pre-heat that oven to 350 degrees.

 Combine 1 cup of self-rising flour and 1 cup of the Yogurt in a bowl until dough starts to form.

 Turn the dough out on a lightly floured surface, knead and divide into 4 pieces.

 Now you’re going to get to have fun, just like when  you were a kid and played with play-dough! You’re going to roll out each dough ball to form a rope and then pinch the ends of each rope together to make a circle.

Aren’t they some beautiful bagels? Place them on the parchment paper lined baking sheet.

Take that egg that you have already beaten and brush it over the bagels.

 Now you can sprinkle your toppings of choice on top of the bagels.  You can make them all different or the same. Maybe one will be sweet, one can be savory and or spicy!

Time for baking!

 Bake the bagels at 350 degrees on a parchment paper lined pan. You can spray the paper with cooking spray if you wish, but the parchment paper seems to work well by itself. Also I put my oven rack up a little so the bagels don’t get to brown on the bottom.

Now bake for 20-23 mins.  

 Let them cool on a wire rack. I have had them hot out of the oven, but if you let them cool they taste better and the texture sets up.

 Enjoy with eggs, cream cheese or make some pizza bagels, yum!
